Following the success of Japan
Gourmet Hall SORA at Changi Airport Terminal 2, ANA Airlines is opening another
outlet at Terminal 1, this time showcasing the best Japanese
dishes from three prefectures: Fukuoka,
Hokkaido and Kanagawa. Modelled after a business class lounge, the 116-seater
SORA at Terminal 1 will feature classic favorites from these renowned brands as
well as exclusive dishes from three restaurants: Ikkousha, Yoshimi and Megumi Maru. Diners can tuck into
an array of Yatai-style ramen, katsu curry and maze don, all at the same place.
There will be wonderful desserts such as soft-serve ice-cream and pancakes for
those with a sweet-tooth.
Ikkousha, a Wildly Popular Restaurant Which Sees Long Queues Every Day, Offers Traditional Yatai-style Ramen
For the very first time in its 15 years of history, Ikkousha will be introducing exclusive dishes prepared in Yatai-style, available only at SORA, such as the Special Tonkotsu Ramen (S$18.70), Special Red Chili Ramen (S$20.90), Special Black Garlic Ramen (S$20.90) and more.
Incepted
in March 2004, Ikkousha is wildly popular in Japan, and boasts 62 outlets in
the world to date. By 2005, the restaurant has achieved a record of selling
1,000 bowls of Yatai-style ramen in a day. In 2011, it established its first
overseas branch in Jakarta, Indonesia, to much fanfare, and has been widely
credited for the rise in popularity of tonkotsu ramen in Jakarta.
The restaurant is helmed by Chef Yoshimura Kousuke, who
made his first bowl of ramen as a staff meal while working in a gyoza house.
What fascinated him the most then is that ramen is a dish without limitations
and boundaries. Each ramen master puts his own unique spin on the classic,
combining different ingredients to make their signature broths, which are
matched with the most suitable noodles and toppings to create a perfect bowl of
ramen.
Katsu Curry Specialist Yoshimi
Opens Its First Overseas Outlet in Singapore
Hailing from Sapporo, Hokkaido,
Yoshimi is renowned for its repertoire of curry rice, katsu rice, katsu curry and
more. In Japan, it has over 19 outlets, and this is the first time the
brand is opening an outlet outside of Japan. Believing in the philosophy that “having fun is delicious”, the
restaurant doles out comforting dishes that please not just the palate but the
eyes.
Yoshimi
is the brainchild of Chef Yoshimi Katsuyama, who first had the idea of starting
a restaurant during his travels in the United States. He yearned to open a
restaurant where guests could eat to their hearts’ content, and Yoshimi is the
fruit of that labour. The restaurant uses premium-quality and safe ingredients
to create imaginative, aromatic and delicious dishes.
The menu mainstays like Pork
Loin Katsu Set (S$23.80), Mille-feuille Katsu Set (S$26.80), Omurice
Curry (S$16), Beef Curry Rice (S$17.90), caters exclusively to the
taste buds of Singaporeans. Dessert lovers can also end the gourmet session with sweets such as the Mixed
Berry Pancake (S$19.80) or the Hokkaido Soft-serve Ice cream
(S$6.90).
Megumi Maru: Singapore’s First-ever
Maze Don Concept Created by Misaki

Megumi Maru will be Singapore’s first-ever
maze don concept, doling out dishes such as the Aburitoro Maze Don
(S$35.10), Unagi Maze Don (S$20.10) and Ebi Mentai Maze Don (S$17.90). The Maguro
and Salmon Maze Don (S$17.30) is a medley
of luxurious maguro and salmon perched on a bed of sushi rice. It is also
accompanied with a variety of healthy vegetables, like ladyfinger and purple
cabbage. An onsen egg caps off the line-up. Another brand-new dish is the Kaisen Maze Don (S$18.80), which is an
assorted poke bowl comprising akami, salmon, boiled prawn, unagi, takuan, onsen
tamago and sushi rice. A delightful dressing, made with sea urchin and shoyu,
pulls all the ingredients together.
Megumi Maru is a concept by
Misaki Megumi Suisan, a wholesaler of fresh and top-quality maguro and sashimi
in Kanagawa Prefecture, Japan. Its trawlers have the capabilities to catch the
biggest maguro in the world. Megumi Maru then imports the fish directly from
Misaki Port to Singapore via ANA Airlines’s air freight. It also uses a
technique called super freezing (超低温) to
freeze its maguro at minus 60 degrees Celsius when they are still onboard the
ship. As such, absolute freshness is a guarantee. With its partnership with ANA
Group, the wholesaler now offers healthy and delicious maze dons right here in
Singapore.
The restaurant is a paradise for
sashimi lovers. There is the Spicy Maguro Maze Don (S$16.90), which showcases maguro, avocado, purple cabbage, cucumber, tamago, all drenched
with a spicy sauce made with tobiko, shichimi and spicy hot sauce. While
the Otoro Maze Don (S$35.10) is an
indulgent dish of fatty and melt-in-your-mouth otoro elevated by a moreish
sauce made with sugar, sesame and soya sauce.
Other crowd-pleasers
include the maki rolls, such as the Salmon Cheese Roll (S$16.90), Caterpillar
Roll (S$13.70), Anago Roll (S$17.90), Maguro Mentai Roll (S$15.90),
and many more.
