Ramen Review: Ramen Keisuke Lobster King

Ramen Keisuke, the most established Japanese ramen brand in Singapore, will launch its 10th outlet Ramen Keisuke Lobster King later this month. Located at Singapore’s hottest dining destination Clarke Quay, this new 62 seater outlet is the second largest ramen outlet under the Ramen Keisuke chain.

In Ramen Keisuke Lobster King, the winning formula lies in the meticulous culinary approach that takes inspiration from the French culinary style behind the famous French lobster bisque. Mr Keisuke Takeda also uses French rock lobsters specially imported from France. Carefully selected for its characteristic rich and abundant roe and flavour, the shells of rock lobster are first pan-fried, crushed into fine bits and subsequently simmered for 6 hours with a special blend of herbs and vegetables to create the Lobster Broth Ramen (Clear Soup). To create the creamy texture and unique depth in flavour in another creation - the Lobster Broth Ramen (Rich Creamy Soup), the stock brewing takes an additional 4-6 hours.

Lobster Broth Ramen with Flavoured Egg - $16.90

2 Slices of char siew, flavoured egg, wanton, fungus, bamboo shoot, cabbage, springy chewy ramen in lobster broth.

Don't expect you will find any lobster meat in it! The lobster broth was very rich, flavourful and addictive. I finish everything in 15minutes or maybe I am just too hungry. Overall, this ramen is worth to die for.

Food Review: Ikkousha Hakata Ramen

Ikkousha serve "Real" Tonkotsu ramen. A special topping, pork chashu is soaked in secret-repipe sauce. The chef perfectly understands how to use roast pork, chashu, as well as other topping,ni-tamago,soy sauce flavored boiled egg, to add spice to ramen.

Started in Hakata which is the ramen capital of Japan, is best known for it's tonkotsu-based ramen, made from pork bones and simmered for many hours.
IKKOUSHA makes the most wholesome tonkotsu ramen, a favorite for traditional ramen lovers and those who avoid overly rich food. You'll enjoy its refreshing taste. Try it and revel in Ikkousha's greatness"

Free flow of egg for you.

Spicy Tonkatsu -

You can choose your level of spiciness up to Level 4. I choose level 3 for my ramen. Spicy lover like me for level 3 is still normal for me, if non-spicy lover you may go for level 1 instead. The ramen came with 2 piece of char-siew, fungus, seaweed, springy and chewy texture noodle.

Tonkotsu Black -

Tonkotsu broth with special fried garlic paste. It was garlicky but wasn't too overpowering! The ramen came with 2 pieces of char-siew, fungus and springy and chewy texture noodle.

Food Review: Kanshoku Ramen Bar

Kanshoku means ‘to finish eating every last bit of your food’ in Japanese. Founded in 2014 by close friends Melvin and Brendon, Kanshoku has since come a long way to create an experience that fulfills this ambitious intention.

Iced Green Tea - $2++

Normal green tea.

Truffle Ramen (Dry) - $16.90++

I tried out their truffle ramen. Interesting dish. It served with two slices of char siew, runny egg yolk, spring and chewy Japanese noodle and topped up with truffle. I find it that the truffle was too overwhelming, I suggest they should decrease the amount of truffle in it, I am not sure am I eating the truffle or a bowl of ramen.

Taste: 1.5/5

Spicy Tonkotsu Ramen - $14.90++ ($2++ for the egg)

The ramen was served with 2 slices of char siew, black fungus, seaweed, spring onion, soft and spring noodle, and spicy tonkotsu broth. This ramen doesn't served with the egg. The noodle texture was softer and less chewy than the dry ramen. The spicy broth was more on the bland side, and it lacking of flavors.

Taste: 1/5

Food: 0.5/5
Ambiance: 1/5
Service: 1/5

My Verdict:
This ramen totally worth the price and the calories! It's just waste of time. I would rather spend a bit more for ippudo ramen.

Otoko Ramen @ Alexandra

Otoko Ramen is newly open at Alexandra. Me and my friend Fuqi was by chance pass by this little unknown cafe, and we decided to give it a try.

They served three types of ramen, Miso, Spicy, Shoyu.

I tried their Shoyu Ramen ($12.90++), the base was very flavorful, rich and thick. The noodle texture was chewy and springy. The only disappointment was their char siew and egg, the char siew tasted bad for me, as the meat wasn't flavorful and it doesn't has the shiok feeling!! The egg wasn't runny and it was cold.

Taste: 1.45/5

Spicy Karamiso - $13.90+

My friend tried their spicy karamiso ramen, the broth was rich, flavorful and the spiciness was perfect, it wasn't too spicy or bland. The rest is the same.

Taste: 1.7/5

My Verdict:
The ramen was average, it wasn't worth your time to travel. I still prefer my favorite ramen stall at santouka or ippudo.

Food Review: Yoshimaru Ramen Bar x Snowman Desserts

“YOSHIMARU” Hakata Ramen Originating in Hakata, Japan, Hakata ramen is a distinctive ultra thin ramen with a film texture, served in a rich, mouthwatering broth extracted from pork bones( Tonkotsu). Pork bones are slowly boiler over 13 hours to create this creamy white and flavourful stock. Yoshimaru has captivated noodle-lovers in Japan and now have 13 outlets. Try Yoshimaru’s authentic traditional Japanese Hakata ramen today!

Ocha (Green Tea) - $3

Normal Green tea.

Gyoza - $6

The skin was too thick and tough. The meat was too little and tasteless.

Taste: 0/5

Traditional Hakata Ramen - $12.90

Tonkotsu (pork bone) broth that was boiled over 13 hours and came with authentic Hakata noodles, 2 slices char siu, 2 halved soft boiled lava eggs, black fungus and spring onions.

The broth was pretty bland, i can't imagine that this was the result after 13 hours of boiling!! The ramen was film and springy. The rest of the ingredients was just average.

Taste: 1/5

Spicy Miso Ramen - $13.90

Similar to hakata ramen!! I can't even taste the spicy miso!!

Taste: 1/5

Food: 0.25/5

Ambiance: 1/5

Service: 0.5/5

Overall, the food quality was bad and the restaurant was very small, the table was very near to each other!! I will not recommend anyone to try it.

Melon Milk Bingsu - $14

The bingsu wasn't up to our expectation!! This bingsu was just average, not recommend for first time trying!! The shaved ice was just tasteless as it was not light others bingsu brand.

Food Review: Chabuton

Prestigious Ramen Chain Chabuton Opens its First Outlet in Singapore
Be the first in town to savor signature dishes of this celebrated TV Champion Chef's ramen restaurant from Japan.

Chabuton, the ramen restaurant that created a great wave in the ramen industry in Japan and Thailand, is finally here in Singapore! Chabuton is the brainchild of a chef who was named “King of Ramen” by TV Champion, a well-known TV program among gastronomes in Japan. He is the owner of the first ramen restaurant appeared in the Michelin Guide; his other ramen joint in the U.S. has been featured in Zagat LA (the world's most respected source of tourist spots and restaurants in the US) for three years in a row too. The chef’s recipes are his secret in achieving all these recognitions.

Menu:

Are you a spicy lover? If yes, here is the great chance for you to win some prizes. Simply challenge yourselves for a bowl of level 5 of spiciness ramen and you stand a chance win to great prizes and you will receive a certificate. From 18 May - 31 July2015.

Weekdays lunch set is from 1130am - 5pm, and is only $13.50. It came with a bowl of ramen, choice of a side dish, dessert and choice beverage. It's a worthy deal.

Food:

Iced Japanese Green Tea - $1

Average Japanese Green Tea.

Taste: 1/5

Chabuton Kara Kara Ramen - $13.90

A huge dollop of spicy minced pork which is a combination of fermented tofu and pork was good. Noodles are stringy and packed with so much flavour. The pork bone broth was rich and creamy but it was a tad too salty and there's too much sesame seed. Overall, it still taste good.

Taste: 1.75/5

Yoruton Ramen (Level 4) - $12.90

The new ramen dish, Yoruton Ramen offers five levels of spiciness, starting from level 1 that's suitable for those with a low tolerance for spicy food and up to level 5 for the fiery fighter. The Yoruton Ramen will be available from 18 May 2015 to 31 July 2015. With every order of the Yoruton Ramen, Chabuton customers will receive a stamp on their loyalty card. Collect at least five stamps on your loyalty card to receive cash vouchers.

I opted for level 4 of spiciness. The ramen consist of the usual juicy char siew, bamboo shoots, the rich signature tonkotsu broth and its special chilli paste. Level 4 of spiciness was tantalisingly spicy with heavy hints of garlic. The broth was savoury and aromatic without overdoing its spiciness. The spiciness kick start after a few mouthful of soup. The more you drink, the more spicy.

Taste: 3/5

Ajitsuke Tamago - $1.50

Chabuton's ramen don't come with eggs, but if you feel that egg is a must-have in your bowl of ramen, you can add on $1.50 to enjoy it. The eggs that we were served are consistent, and are runny. It was good.

Taste: 3/5

Food: 2.5/5
Ambiance: 3/5
Service: 3/5

Overall, The ramen was pretty good. Spicy lovers come down for the spiciness ramen challenge before it end. More info: Apart from customising your desired level of spiciness, you can also choose how you want their ramen and broth to be prepared. You can even choose the texture of their noodles, from soft or hard. Depending on your preferences, you may even choose how unctuous and salty you want your dishes to be.
